Yellow sarson is an oilseed form of Brassica rapa, an annual herb of the mustard family with bright yellow flowers and pale yellow seeds. It is widely cultivated across the plains of North and East India for its pungent seed oil.
Known in Ayurveda as Sarshapa, mustard seed and oil are described in classical texts as warming. The oil has traditionally been used for massage and in external preparations for joint comfort, and it remains a common cooking oil.
